Cooking Techniques: Chinese Cuisines. Second Installment

Hey All
I'm  back . Was little down  for sometime  and  my monitor  was also out of  order. All  is  well  now and I'm here  with the second installment  of Cooking Techniques of Chinese Cooking.
Well we have  completed Chao and  Bao under stir fry. Now we would  move  to Deep Frying.


DEEP FRYING

In deep frying the food is submerged in hot oil or fat. Some of the most delicious Chinese starters are deep fried and  most of these require meats to be  deep fried before combining then with the vegetables and   flavorings.


The next style is steaming, which is considered the most nutritious method of cooking as there is hardly  any oils or fat used.


STEAMING
All sorts of food items can be  cooked in steaming, such as meat fish, chicken or mutton dumplings, buns.For better after cooking results the food items needs to be  put  for steaming once  the water underneath starts boiling. There  are again two more methods involved  in steaming and  thats the regular steaming where  the raw food is kept in the steamer and  the surrounding steam does the cooking and  the other method or style is where the pot containing the raw food is partly immersed in boiling  water and  the cooking is done by  both the steam and  the hot water.


Well  that's  its  for today, will add some  more in  few days time. I need to stop here as I' m feeling very sleepy as its 4 in the morning. Tomorrow I might  not be  able to contribute  as I would be  little busy.... can;t promise when  but say  very soon.

Cooking Techniques: Chinese Cuisines

Hi  All,
Today I'm here to share  some of the cooking techniques of Chinese cuisines with you. To start with, I would discuss the two classical methods of Chinese cooking under Stir Fry  and  that is  CHAO & BAO.
CHAO is the method where the wok is  covered after adding all the vegetables, meats and  other ingredients till cooked and then its stirred and tossed out immediately.


And in BAO the vegetables, meats  and  other  ingredients are  put on an extremely  hot wok with simultaneous tossing and stirring and  would  only stop  when an ingredients is to be  added  and  once cooked its is removed from the wok and  serve  in a desired platter.

There might be a question in your mind by this  time that how can you get meat cooked in a wok by just stir-fry method, well in Chinese cooking most of the ingredients which needs thorough cooking  specially red-meat which needs a little more time  to get  cooked are already cooked either by deep frying  or by steaming before it is combine or put together with the other ingredients  or vegetables. And  as the meat items are coated  with batter it is not advisable to keep these meats items in the wok  for a long time  as the meat coats  would get soggy with the release of water from the vegetables.

Remember never leave  the cooked food in  the wok even if the range is off, because the base of the wok is very thin and  it might burn your preparation. 

Well I will  have to conclude here   for  now, will write more about it either today by day end  or will  get back tomorrow....  till  than  happy cooking and  eating....

Blog Name Changed to AMBROSIA

In ancient Greek Mythology, ambrosia is the food and drinks of the Gods, often depicted as conferring ageless immortality upon whoever consumes it. It was brought to the Gods in Olympus by doves, so may have been thought of in the Homeric tradition as a kind of divine exhalation of the earth.
The concept of an immortality drink is attested in at least two Indo-European areas: Greek and Sanskrit. The Greek (ambrosia) is semantically linked to the Sanskrit(amrita) as both words denote a drink that gods use to achieve immortality. The two words may be derived from the same Indo-European form, immortal.
An example of the Ambrosia in mythology, is the story of the birth of Achilles, Thetis (mother of Achilles) anoints the infant with ambrosia and passes the child through the fire to make him immortal. But Peleus (father of Achilles), appalled, stops her, leaving only his heel unimmortalized.
There has been lot of different other stories about ambrosia, ambrosia means not mortal i.e. immortals, but there has been lots of debates wherein many classical scholars have denied that there is any clear example in which the word ambrosios specifically means immortals and rather they preferred to say that it may be considered as a fragrant. Well there were lot of things that were true but there has been so called some great scholars who always denied the real facts. Few examples are the death sentence to Socrates, Joan Of Arch, who was found innocent after 200yrs of her being burnt alive. 
I believe I'm getting deviated from the topic, I'm here to share various recipes from different parts of India and also from the globe. So I would consider and refer Ambrosia to delicious cuisine.................

Health

When Who Health Organisation(WHO) came  into existance in the year 1948, HEALTH meant to be - a state of complete physical, mental and social well being and  not merely being the absence of disease or infirmity. And  one of  the  most important factor  to maintain a healthy health  its very  important   to maintain HYGIENE and  I'll  share some  information  with  you regarding the same    when I write next time  and I hope  that the readers are  not bored by what I'm writing. But yes I can assure  you  that when I start the  FOOD section  the reader who are foodie like me  will  certainly enjoy...  and  all girls remember "The way to a man's heart is through his stomach."
Today is  the 1st  day of my blogging and  I do not know how  for use it properly. I even do not know what I'm writing now will even show up in my blog but still giving it a try... lets  see
